Yield serves 6-8 people
Ingredients
- Butter..... 1 Tb.
- Salt..... 1 tsp.
- Ground pepper..... 1/4 tsp.
- Onion, minced..... 1 cup
- Celery, diced..... 1 /2 cup
- Bacon, raw, diced..... 1 lb.
- Apples, peeled, diced..... 4
- Raisins, plumped..... 3/4 cup
- White Bread, cubed..... 1 loaf
- Milk, whole..... 1 1/2 cups
- Eggs, cracked..... 3
- Parsley, chopped fresh..... 2 Tb.
Method
- In a sauté pan melt the butter over medium heat. Season the butter with salt and pepper.
- Add the onions and raw bacon and cook until the onions become clear and the bacon gets somewhat cooked and slightly soft. Stir frequently.
- Add the diced apples and raisins, remove form the heat and set aside.
- In a separate bowl combine the bread cubes and the milk and let the bread soak for 10 minutes.
- In a baking dish combine the onion/bacon mixture with the diced apple/raisin and soaked bread.
- Gently incorporate the eggs and parsley into the stuffing.
- Bake in a 325 degree oven for about an hour and serve warm.
